Easy Mango Chicken Rice Bowl

Equipment

  • frying pan
  • Kife
  • cutting board
  • small pot with lid

Ingredients
  

  • 4 Chicken breasts
  • 2 cups Basmati rice
  • 2 Mangos cubed
  • 1/2 cup Hoisin sauce
  • 1/2 Cucumber cubed
  • Salt & Pepper to taste

Instructions
 

  • Cook the 1 cup of basmati rice according to the instructions.
  • Flatten the chicken breasts with a mallet until thin and even in thickness.
  • Sprinkle olive oil, salt and pepper on the chicken breasts.
  • Cook the chicken breasts, 5 minutes on both sides, or until cooked through. Rest the chicken breasts for 5 mintues and slice in thin strips.
  • Meanwhile, cube the mangos and the cucumbers.
  • Fill 4 bowls with 1/2 cup of rice, top with cucumbers, mango, and chicken. Drizzle hoisin sauce. Hoisin sauce can be warmed, or served cool.
